Hamburger Soup

Ingredients

– 1 pound ground beef
– ½ onion, chopped
– 2 cloves of garlic, minced
– 3 cups beef broth
– 3 cups mixed veggies (frozen or fresh)
– 1 can of diced tomatoes (28 ounces)
– tomato paste (6 ounces)
– 4 cups of potatoes, peeled and diced
– 2 teaspoons Worcestershire sauce
– 1 tablespoon Italian seasoning
– Salt and pepper to taste

Instructions

1. In a large pot, cook the beef and onion until the beef is no longer pink and the onion becomes tender. Drain excess fat, if preferred. Add the minced garlic and cook for 1 minute.

2. Add the beef broth, diced tomatoes, tomato paste or condensed tomato soup, diced potatoes, beef base or Worcestershire sauce, seasoning mix, and salt/pepper. Bring the mixture to a boil over medium-high heat.

3. Once it reaches the boiling point, reduce the heat to a simmer. Cover the pot, and let it simmer for 10 minutes.

4. Stir in the mixed vegetables and continue simmering for 12-15 minutes, or until the potatoes are cooked through.

Enjoy!
