Chocolate Coconut Bundt Cake

I have a really good coconut cake recipe but was craving chocolate, so I switched out a few ingredients. This is what I came up with. I took it to work (my co-workers are my guinea pigs, ha) and they all loved it! I hope you do too.

Pat…yes, I’m sure it will work in a 9 x 13 pan just fine. Just adjust your baking time.

Joann Bernard…I’m not really sure what to say about your negative comment and rating, since you are rating it without having tried it. Millions of people like the convenience of a cake mix, including myself, but if you don’t like using them, that’s fine. If I am looking for recipes and find something I might like to make, but don’t like something about it, I just use the things I like about it and adjust it to my taste. You could easily make this with your own cake recipe and make it your own, like I do. One thing I never do, though, is make negative comments to people for no reason. :-/

Sarah…wow…thanks for going to the source for everyone! Wish my grocery store would have a $1.00 cake mix sale! I’m really glad you liked the cake, too. I love using the mini chips as well. Let me know if you use the coconut rum and how it turns out. I have some here, and actually thought about using it in a cake, but haven’t tried it yet. Great minds think alike…right? I’m going to have to look for the Almond Joy & Mounds pudding mixes…yum!

INGREDIENTS

CHOCOLATE COCONUT BUNDT CAKE
1 Devils Food or chocolate cake mix
1 pkg chocolate instant pudding mix, 4 serving size
1 1/3 c water
4 eggs
1/3 c vegetable oil
1 1/3 c (about) coconut
1 c semi-sweet chocolate chips
CHOCOLATE BUNDT CAKE GLAZE
1 can(s) sweetened condensed milk, 14 oz
1 c semi-sweet chocolate chips
1 tsp vanilla extract

INSTRUCTIONS


1. Heat oven to 325 degrees. Combine cake mix, pudding mix, water, eggs, and oil in large bowl until blended.
2. Beat on medium speed 4 minutes. Stir in coconut and chocolate chips.
3. Spray a bundt pan with cooking spray, or grease and flour (or dust with cocoa). Pour batter into pan.
4. Bake approximately 1 hour (check with a toothpick at 50 min).
5. Let cool in pan for 15 minutes, and then remove from pan and let it cool completely on a wire rack.
6. To make the glaze, combine sweetened condensed milk and chocolate chips in a small saucepan.
7. Over medium-low heat, stir constantly until chocolate chips melt and the mixture is smooth. Do not allow it to bubble.
8. Remove from heat, and stir in vanilla. Allow to cool for just a bit before glazing cake.
9. You can sprinkle the cake with coconut (I toasted mine) or nuts, or just leave plain!
